Convection Ovens vs. Conventional Ovens

The biggest difference beween the two is that Conventional ovens use coils at the top and bottom of the appliance to heat it up while Convection Ovens use a fan and exhaust system to constantly circulate the hot air. As the hot air is always moving around it cooks at all angles so no need to flip the food or move it around to get at the whole item. As a result it cooks faster and more evenly than the Conventional oven.

Adjusting Cooking Times

Food prepared in a Convection oven will be ready quicker and since most recipes are made for Conventional ovens there is an adjustment in preperation time required. The common belief is that food cooks about 25-30% faster in a convection oven so one of two things need to be done in order to account for that. You can either follow the suggested cooking temperature in the recipe and cook for 25-30% less time than suggested or you can cook the item for the suggested amount of time in the recipe but about 25 degrees F less temperature.

Best Dishes to Prepare with Convection

Foods that roast or caramelize as well as baked goods perform very well in convection. Roasting meats and vegetables, Baking cookies, pies, pastry, casseroles, breads, buns are all ideal in Convection. They are also good for dehydrating fish or roasting nuts. They do not work well for cooking custards, flans, souffles, cakes or quickbreads.
