The biggest difference beween the two is that Conventional ovens use coils at the top and bottom of the appliance to heat it up while Convection Ovens use a fan and exhaust system to constantly circulate the hot air. As the hot air is always moving around it cooks at all angles so no need to flip the food or move it around to get at the whole item. As a result it cooks faster and more evenly than the Conventional oven.

The common belief is that food cooks about 25-30% faster in a convection oven so one of two things need to be done in order to account for that. You can either follow the suggested cooking temperature in the recipe and cook for 25-30% less time than suggested or you can cook the item for the suggested amount of time in the recipe but about 25 degrees F less temperature.
