We see a lot of people asking this question online and though it could be argued that a pressure cooker is capable of canning, it’s not something that we would recommend. In fact, the National Center for Home Preservation advises against it.
Why? Well, it really comes down to safety. Simply put, a pressure cooker is not built to handle the canning process. The ability to accurately monitor the pressure/temperature is an essential part of the canning process and a pressure cooker is not capable of doing this, at least to the level of accuracy required for optimal safety.
If the proper pressure is not achieved and maintained, the same will be true of the temperature, which is needed to properly destroy harmful bacteria. Failure to destroy such bacteria can have serious consequences including botulism, a rare and potentially fatal illness caused by a toxin produced by the bacterium Clostridium botulinum.In short, the health risks are too severe to even consider using your pressure cooker for canning. Spend the extra money and get yourself a pressure canner.
